Spinach, Pomegranate, & Goat Cheese Salad
This is not really so much a recipe as a clever combo of ingredients. This is always a special treat because pomegranates are only available seasonally.

Instructions
  1. Start with a base of 3 or 4 handfuls of baby spinach on each dinner plate.
  2. Top with pomegranate seeds, crumbled goat cheese, and roasted walnuts.
  3. Drizzle with balsamic & olive oil.
